New year new dish!
Ingredients
2 small onions (finely chopped)
2 green chillies
1/2 teaspoon red chilli powder
Clean the mushrooms until they are white. Warm the kadai and pour in oil and heat up. Finely paste garlic and ginger and add to heated oil. Add the finely chopped Onion and chopped green chillies. Stir the mix till the onion turns brown (not golden as some book might guide you to believe).
Dim the flame, and add chopped mushrooms. add little bit of salt, about a spoon of red chilli powder and as much garam masala as you like. Mix it well and if it gets boring, try slicing the mushroom pieces simultaneously.
pour in some tomato ketchup and mix. Put a lid on it, let it simmer and forget about it until your friends remind you about your dish.
Hide the sense of panic and fear of possible embarrassment and open the lid. If its not all black, you are in good shape. melt 2 spoons full of butter and pour it round the edge. turn off the burner. garnish with coriander.
Serve! Bask In Glory! Make your friends clean the kitchen.

well creative genius often lacks the proper recognition from the era that they belong to... its sad. But thats how things often are.

this was yummy...made it today.
ReplyDeletewith some additions of my own...try basil instead of coriander for variation...throw in capsicums to the mix and cook the garlic-ginger-onion-chilli-capcisum covered on a low flame before adding the mushrooms...
some blackbean sauce and chilli sauce along with the ketchup...
the credit goes to your core recipe...simple...doesn't over power the earthy flavour of the mushrooms...i just thought of a few more things that go with it :)
